Roasted Chilli Potato Fans.

Roasted chilli potato fans look absolutely beautiful and taste even better. Lay your potato on its side and slice into equal slices without cutting right through the bottom. Slip thinly sliced pieces of chillies into each of the slits. Drizzle on some olive oil and sprinkle with salt and pepper. Roast your chilli potato fans for 35 mins in a 180˚C pre-heated oven. Sprinkle with grated cheese seconds before serving.
