The best way to get every delicious iota out of your chillies is to chop them up and then crush them with your mortar and pestle until nice and pasty. Don’t be shy about being heavy-handed. The harder and longer you pound, the more deliciousness your chillies will deliver. It’s up to you if you want to remove the hot pips. But do this before you start bashing the chillies around.

    1. Absolutely Zachery. Give them a little pinch and make sure they bounce right back. If your finger breaks through the skin then the chilli is bad. Don’t take it.

    Always just used to slice them then chop the chili finely with a knife.
